    bottle cleaning

    Pretty much same thing as everyone. If it's an old cruddy bottle, oxiclean soak inside and out. If it's freshly poured, rinse well immediately and store well until bottling day.

    FG 1020 reasonable for an OG 1062 brew?

    I took an autumn amber ale kit with a kit specified OG of 1042 and FG 1012 and added 500 grams of dextrose. That kicked the OG to 1062, that was 3 weeks ago. A pre-pitch sample tasted kind of like iced tea. This kit was shipped to me with the wrong yeast, so I pitched Coopers on it dry...

    Rookie Star San Question

    Another +1 for the sulfiter/vinator. Works great. 3 or 4 squirts in each bottle and set it to drip. If it's an ez-cap bottle, dip the cap and gasket down into the solution real quick too and that's that. I do this while the priming sugar is nearly chilled down enough to pour and bottle the batch.

    Basement in Winter

    I have a small landing at the top of my basement staircase that I have my eye on if needed. Did my best to seal up gaps and drafts in the basement this summer. Hopefully that'll help some and I can keep operating in the basement too.

    Ok, good to know. Because like the OP, I would like to be able to know within a few degrees or less what the real temp in the fermenter is while trying to cool to a specific temp. Measuring the swamp cooler water temp would *seem* to be a good way to know, but perhaps not so much. Next time...

    I say 56 to 57 sounds absolutely perfect for swamp cooler water temp. Is it well confirmed that ferment temp is ~10 degrees hotter than swamp cooler temp? Because without ice, swamp cooler water temp will be ambient temp anyway. If the evaporation itself cools the water and not just the air...

    What type of thermometor should I use.

    I also have a lab thermometer (the $5 one) and it seems to be the standard out of all of my thermometers. Dont boil it, but for the 150 to 160 range or whatever you exactly need, it should be really good. I tie a thin wire to mine and dangle it from an upper cabinet knob down into the kettle...

    It PROBABLY will be ok as it hasnt really been super duper hot in the east at all the last few days. I'm waiting for a replacement item from midwest supplies that I was told last Wednesday was sent out via priority mail last Wednesday. How the heck long does USPS Priority mail take anyway...
