    First Beer Attempt - Hefeweizen

Drinking my first hefe now, from an extract kit. It sat at 62F. Clove notes, light citrus. Very slight banana, not much. I'd like to get some sort of temperature control capabilities to try this at a higher temperature, same with saisons too.

Trying my first original recipe, would like some feedback

Thanks for the feedback. I'm aware of the misnomer. I'll probably use a bag, if anything to make clean up easier. Well, I've read (and been told) that it's generally a good idea to get it off the yeast cake as soon as you can once fermentation has slowed (stopped) and stabilized...unless...

    Kit Hefe brew, seeking advice

Cracked open a bottle this evening to check on carbonation progress. Seems to be about right. Pretty pleased with the finished beer. Crisp, clean. Citrus and clove notes. Quite refreshing. Just grabbed another:)

Trying my first original recipe, would like some feedback

Thanks! For dry hopping in secondary...I'm thinking about putting the hop pellets in a mesh bag. Is that a fairly common practice? Took a gravity reading this evening and it's at 1.010 SG at 62F. Going to check again tomorrow to see if gravity changes at all. Looking to move this to secondary...

I'll shoot for secondary. I was planning to let it sit there for about a week.

    Kit Hefe brew, seeking advice

Wanted to share some updates. I bottled this last Saturday (6 days ago). Looked and smelled correct. Tasted about right, no off flavors. Got 53 twelve ounce bottles out of it. Put them in cases, and covered them with large kitchen trash bags...just in case of bottle bombs. Going to chill and...

    Belgian Saison Extract Recipe

I'm kicking around some ideas for my next saison, which I wanted to be a bit bigger. Brewed a session saison about a month ago, used 3711 French. It's in secondary now with sage and orange peel. I'm going to pin this thread for reference. Thanks for sharing!

Trying my first original recipe, would like some feedback

It's sitting at 62F right now. I was considering dry hopping, and your suggestion strengthens this! Should I dry hop when I move to secondary, or before?

Trying my first original recipe, would like some feedback

So, this recipe has morphed and changed a bit over the last several months. Changed the hop schedule to do a small addition of each of the three hop varieties every 15 minutes. Here's how it went down. Original Gravity: 1.060 (1.056 - 1.075) Terminal Gravity: 1.015 (1.010 - 1.018) Color: 14.34...

Kit Saison brew, herb or citrus zest addition

Thanks for all the replies! Today I racked this to secondary. 2.5 gallons to carboy as is. 2.5 gallons to carboy with 10g dried orange peel and 6g dried sage. I'd like to leave them both sit the same length of time in secondary for side by side tasting purposes to help me refine this type of...

Kit Saison brew, herb or citrus zest addition

Update, took a gravity reading today. It's sitting at 1.017, down from 1.018 on 5/30...about 8 days ago. Starting gravity was 1.050, and target final gravity is 1.013. Does this seem to be progressing correctly? It'll be in primary two weeks on Friday.

Update, took a gravity reading today. It's sitting at 1.024, down from 1.028 on 5/30...about 8 days ago. Krausen is still there, seems to have gone down a little in the last week. Starting gravity was 1.052, and target final gravity is 1.013. It appears that it's got a little ways to go. Does...
