    Bitter with SA-04?

Fill a keg bucket third to half with H20, then rotate the ice packs? Drape with towel? I guess it's better to use a glass carboy (5gal) or is plastic bucket (6.5gal) okay? What about temp swings? I work during the day, so there will be a good part of the day that I can't get to it (come to...

    Bitter with SA-04?

I have an English Bitter kit (Innkeeper from Northern Brewer), and I want to use one of two dry yeasts: SAFALE SA-04 or DANSTAR NOTTINGHAM ALE YEAST. I plan on keeping the beer in the primary for two weeks then another two weeks bottle conditioning. The Safale S-04 is said to enhance...

Spawn from another thread..leave brew in primary, or rack once before bottling??

I see both sides of the argument, but one point to make, there's yeast left over to bottle-condition, so there's going to be yeast in the secondary.

    Top-off water temperature

I usually try to boil 3.5 gals, and then top off with less than 2 gal. However, I realize two things: 1. I would love to have a little more than 5 gals in the fermenter since I end up losing some to trub/gunk when transferring from primary to secondary, and from secondary to bottling. I'm...

    Top-off water temperature

But I want to move my wort at 100F, right after the cold-break. Then mix with cold water... Should I lower it to 80F? Or does the final mix matter? What does "outside OG mean" (BTW, all the Brewer's Best kits talk about this "Be careful not to add a volume of water that will cause the wort...

    Top-off water temperature

I've read about HSA, and also read about letting the water get outside the OG. I brewed five batches of extract brew, and they've all turned out great. I'm starting to really tweak out my brewing process now, which leads me to the following: I brew a partial-boil of about 3-3.5 gals. I can...
