    Sure sounds like you have the whole recipe there....You're going to have to find some high gravity strain of yeast to get that far though. I'd imagine they do a staged fermentation starting with some regular strain, and finish with a champagne yeast or something similar.

    $50-80 isn't really that bad for a 10 gallon batch, especially if you're doing higher gravity, hoppier beers. You're already down to about 50-80c a beer.

    Trellis design

    A little bit of math will tell you how much more length your angled twine will get you vs. going straight up. In my case, it was only a third of a foot or so, but my hops are only 3ft from the base of the pole. My post is about 13' and the Chinook will just have to wave in the wind :D

    Good price for a keggle?

    With the fittings welded in, and the pieces to attach to them? Probably 40 for the keg, 50 for the work, 20 for the fittings, 20 for the valve (ss 3pc) and the thermometer will range from 20-70 Fully outfitted for around $150 probably is a decent price, but that's all pretty rough math.

    high pressure vs low pressure orifice...

    Your flame looks ok to me. I'd be interested to know how softly you can run it though. It's got a great flame for heating and getting to boil, but I'd like to see/hear how it does for just simmering or maintaining a mash temp.

    Shouldn't cause too much dead space. I suppose maybe the barrel lid would bow a bit under the weight causing your drain to be slightly off center. I guess the only way to tell is to test it out :D You might be able to run some sort of sideways diptube, but if you know you're going to lose...

    Help with gas plumbing.

    I just bought all the pieces for mine this weekend. The drawing is home. Piecing it together was easier once I was in the store. I used 1/2" black pipe, Ts, gas valves with 1/2"npt threads on the "in' side and 3/8" female flare on the "out." Off those I'll run copper tubing to the flare...
