Mexican Christmas stout (w/ Mexican chocolate, piloncillo, vanilla, cocoa, lactose)

Thank you for your input! Will use 4oz of cocoa nibs instead of 1oz. In regards to steeping the cinnamon sticks, should I add the "tea" in flameout or at secondary? I read from other threads that they just soaked them in vodka for a few days and added to secondary. Good insights on the...

    yeast starter for extract brewing?

I'm doing a stout this month (will be my 4th brew batch). I have only done extract batches and used dry yeast. All my 3 batches have been successful. Seems a lot of people really recommend the use for yeast starters, but in regards to all-grain. What about for extract brewing?

    Brew Dogs...

Love the fact they showcase local breweries, craftpubs, and local brews in the respective cities. Hope they do Chicago! The concept might be silly, but I think if they were just brewing normal brews at local breweries, might get repetitive. I guess they have to spice it up a bit for...

    Brewdogs TV Show

I like the show. Each episode is at a different city and a recognized local brewery hosts with the two stars. I love the fact they incorporate local brews and brewery, notably their top five craftpubs and breweries in the city/state. Yes, silly they go to extreme measures to brew beer, but I...

want to brew a Mexican stout - recommendations?

Thank you for the recommendation. Will eliminate the use of piloncillo then. Since I am new at brewing stouts, are there any good milk stout extract based recipes?

want to brew a Mexican stout - recommendations?

So I have brewed two beers with a buddy (extract, not mash) with the help of brewing kits. We successfully brewed an APA and Belgian witbier. We are thinking of brewing a chocolate stout, but modifying a bit by incorporating Abuelita Chocolate (Mexican chocolate hard tablet used for making...
