    Apfelwein smells like nail polish remover...?

    Confused.... I thought Campden kills yeast? If you add a tab per gallon, aren't you officially ending fermentation? I am 4 days into my first batch of Apfelwein, and I am noticing a nailpolish like odor. Should I add a lesser dose of Campden, or...? I am doing this in a MRB keg...

    Just started a 2 gallon batch in my MRB keg. 2 gallons apple juice, 4 oz of EC1118 champagne yeast. My LHBS owner recommended this yeast for what I am doing. A good choice?

    've got a very messy brew that is going on two weeks in the fermenter. I dry hopped 1/2 oz Centennial hops in the keg. It's almost two weeks, and it looks like it's ready to bottle. Minus the hop flakes floating around on top of the brew. Filter it somehow? Or RHAHB? Bottle as normal...

    how long do you let your ales frement for?

    I'm just tasting my first batch(WCPA) after 7 days fermenting, 7 days warm conditioning, and two in the fridge. It was good, but like everyone is saying... Let it go double that, or more.
