    Delaying boil

I'm not sure what harm it could do, but I'm sure you made beer and it will be good! :)

    Serving temps?

Thanks, and you are right. I guess it's like eating frozen chocolate.

    Serving temps?

So, After a about a week in the bottle, I have broken into my first brew... I wanted to wait 3 weeks, I swear. :drunk: Anyways, I am realizing that the closer to room temp (My basement is about 65 degrees) the better this brew tastes. Anything cooler and I start to loose the hop flavor. Any...

I forgot to add water to the primary....

I did this with my batch last night. Though i had pitched the yeast just a minute before I realized I forgot to add the top off water, so i'm sure I will be fine. Lowered my OG a few points thought. Started off at 1.057 without the top of water and ended at 1.045 with top off water.

    first drink of first brew

Yeah, so I had two of them last night and I have one more in the fridge. I typically only drink beer on the weekends, so I will do my best to stay away until at least next weekend. :) I plan to brew up a hefe this Wednesday night.

    first drink of first brew

Yeah it was good. A little "green" tasting, but that is to be expected after only being in the bottle for 5 nights. The kit was a Brewer's Best American Style Micro Pale Ale. Brewed on 5-5-09, bottled on 5-26-09. Basically just checking to see if it was carbing up. I'll give it a few more...

WOW! That's all. WOW. Worth the wait! :rockin: only a few days in bottle and it tastes wonderful...

    Brewer's Best Irish Stout

If you want a quick brew Hefe's seem to be the way to go. No need for secondary, a quick 1-2 week primary, and 1-2 weeks to carb up and you should be good to drink in as little as 2-4 weeks. My next brew will be a hefe, more than will get brewed next week sometime. Then after that is in...

    Brewer's Best Irish Stout

Shouldn't stouts be left to age a little longer? three days in primary surely isn't long enough. You might not be satisfied with this batch if you rush it. Just my .02.

    Easiest way to remove labels?

I just removed labels from 50 bottles the other night. I used oxiclean in my untility sink. I soaked the bottles overnight, so the next evening when I went to remove the lables, most of the lables were floating in the water. :) All I had to do was rinse the residual glue off of the bottles...

My Wit has a Hot-dog Aftertaste!!!!

I had a "beerfest" at my house in early April and one of the beer we were sampling was the Celius White. While the beer ranked very high in the 20+ beers we sampled (I think it got either 2nd or 3rd), my Aunt instantly stated the Celius tasted like hot dog water. After that everyone else...

    Cheapest bottles?

I found 9 cases of bottles for free on craigslist. It was about an hour away, but it saved me from having to save up bottles before I start the bottling process. A day soak in water/oxiclean and all of the lables were quickly removed. Oh, the lady from the craigslist ad gave me a hefe extract...

1.02 too sugary to bottle safely?

Instead of posting my own thread, since this topic comes up quite regularly, I will seek my reasurance from this tread. :) I brewed up a batch of Brewer's Best Micro American Style Pale Ale (Extract) on May 6th (My first batch). My OG was right at 1.050 wich is the middle of the approximate...

    Hello from Peoria, IL

bubbles have stopped... I will take a gravity reading in the next couple of days, and plan to bottle next Saturday, May 23rd. In the mean time I am going to brew up a Hefe kit that I got for free from someone on Craigslist plus 9 cases of reusable bottles. The kit was missing the Yeast, but a...

When to bottle, when to drink?

to the op: I would imagine that the stout would need to age for a while before it tastes right. Bottling and drinking at the times you are wanting to, your beer will be pretty "green" tasting. Get a light Ale kit that you can brew, bottle and drink within the time you are waiting to crack open...

    How much to boil?

Yeah, that really wasn't something I even took into consideration when I started boiling. And I only realized it was going to be a problem when I got the wort in the fermenter and the temp wasn't dropping in my small ice bath. Shaking and sturring only helped so much. My next batch I will be...

    How much to boil?

I boiled my first batch this week, Like you I waned to boil more water in my batch before topping it off. I boiled 4 gallons instead of the 2 the kit recommended. The one thing I did not take into consideration was the amount of time it would take to cool 4 gallons of boiling wort down to a...

    Hello from Peoria, IL

Bubbles! I was getting a little freaked out last night wondering if my yeast were going to do anything. This morning went down to look and we have visible activity. Now, we wait...
