I'm looking to do the same thing. Here is what I've come up with so far. Hopefully someone else will chime in. From what I understand you'll want the PID to be able to run in manual mode.

I just measured my Frididaire 7.2 cu ft freezer Model # FFFC07M2KW that I recently picked up. It is 16 1/2" front to back.
