    1st time mead-maker w/ sulfer smell

    Tasted good in march... tasted good this past weekend when I bottled it... dry, but not overly so... 12%ish .996... looking forward to it down the road. I put it in Fischer (french) swing top bottles... hope that is okay for upwards of a year+... funny story... while I was washing bottles...

I always taste my hydrometer samples and, if anything, I waited a couple extra weeks before racking to secondary... Any impatient impluse I have can be put off with my back to back to back beer projects and...

    not related to dead guy... (which I love)... but I've been trying william's extracts for a while now and some of the FGs have remained a little high (OG of 1.055 might only drop to FG 1.024 depending on the type of extract... i.e. the nut brown remains higher than the amber which hit FG...

    12/29/11 racked to secondary... still got that rocket fuel edge, but time, patience, and time should make this nice... 15% w/ SG of .998... but still a little sweetness.

    It has been fermenting 10 days; I am still getting one bubble in my S-airlock every 7 seconds or so. It fermented really strongly for a number of days before slowing. I aerated for 4 days, but did not add anything. Tastes pretty decent, though it is (obviously) still very sweet. No funky odors...

    How is the best way to top off a carboy?

    Thanks all for the ideas to consider. I have a 1 gallon batch I started back in august, but I hated the idea of pouring my first mead into my big batch (esp. when it is tasting pretty good...). In the future I will start a small batch for use when topping up.

    lol... sorry and thanks. Going to the fridge now. some if it (that seen in the bottom) seems to be mostly heather residue that passed through the strainer and funnel screen... the rest is coagulated proteins and wax particles (got some help at gotmead).
