    Thanks for all the suggestions and help. Both the Strawberry melomel and Apple Cyzers are doing great. Got labels ready to go for bottling!

    Quick picture of the melomel. Had to sample a bit of it yesterday when I moved it off of the blow off tube to an airlock. It was sweet with a satisfying twang from the strawberries. Could taste the alcohol for sure.

    Awesome. If it's just a matter of re-racking a few times, then that's good news. I was concerned that since I started with a really cloudy cider that it would impact the final clarity of the cyser.

    Quick opinion on conditioning time

    I'm thinking at this point the ABV is going to be around 5.12% with an OG of 1.059 and an FG (estimated) around 1.020. This is just a guess though.

    I'm going to be brewing a pumpkin stout - ideally for consumption in late September early October. I've read that stouts can actually improve a great deal given the opportunity to condition for awhile after bottling. I want to get the timing of the brew and it's consumption to work out...

    cacao nibs in a chocolate stout

    I'd read soaking the nibs in vodka for 3-7 days, straining the nibs out and adding the liquid to your priming solution also works nicely. I haven't tried this, and am coming up on the time when I decide to add the nibs to my Milk Stout directly or try this other method. Thoughts?
