    You could do that or, as flowerysong mentioned, you could make a cyser and easily use up the remaining space as well as bring more sugar and an interesting flavor to the party.

    I haven't tried too many varieties of mead, but one I can definitely suggest is White Winter Winery out of Iron River, WI. I've had several varieties of theirs and they've all been very good.

    Apfelwein: Longest time in carboy?

    I kept mine in the carboy for a little over two months and bottled with 5 oz. of dextrose. It's pretty flat after over a month in the bottle. I'd suggest repitching some yeast at bottling time if you leave it in the carboy that long. On my first batch I did 5 weeks and it carbonated just fine.

    Hehe, I remember stopping at a rest stop outside of Yuma, AZ on the way to San Diego to have a cigarette and it was about 120F out. Screw that. My motto is, you can always put on more clothes to stay warm. At 120F, you're screwed.

    I've seen that done before here. It's pretty cool. A lot of it instantly turns to gas and goes up in a puff of smoke. That's pretty much the only thing cool about it being that cold outside.

    Well, it's -5F right now with a -21F windchill. :( Coldest for me was about -40F with a -70F windchill. Not exactly recommended to be outside at that temp since frostbite starts in roughly 60 seconds.
