    That pretty much sums up all of my thoughts and fears - but it does raise the better question. All of this hard work and effort will only produce a clearer, but almost unavoidably oxidized beer. Do judges base their scores on sediment amounts? There's not a lot, but there are a few floaters...

    When changing the boil size from 5 gallons to my 3 gallon partial mash brew pot it dramatically changes the IBU's - I'm relatively new with building recipes, do I really need to use considerably more hops when doing a smaller boil or do I have a setting out of whack in Beersmith?

    Frigidaire makes a 25 cu ft for $850 retail - readily available at $749 - that not withstanding - the thing's freakin' huge - 6 foot wide + on the multi-task - or get ready to drink :mug:

    I use Wit yeast - Wyeast 3944 for my Blue Moon-ish wit. I am not familiar with Saison yeast, but after looking at the Wyeast description of the yeast it doesn't look like it would be out of line. I'd say give it more time - two weeks in the bottle is still pretty green - go buy some Blue Moon...

    They are cool looking bottles - are you going to leave the original Pepsi logos on, or try to get them off?

    I don't know about cleaning out the dirt, but since they are old Pepsi bottles, they are probably clear. If that's the case, I would be worried about all of my fine beer tasting like Heineken. Stay away from the light!

    It's just 1/4" plywood. I think it'll be ok - it's been cooling for two weeks with the left and right sides on, front's been on for over a week.
