    Does anyone else ignore their water?

    Unfortunately, I can't ignore my water. It is vary hard, and tends to either bring out tanins in mash or over accentuates the hops. Now, I use RO water with adjustments.

    Why partial mash?

    That would certainly have made it easier, but I have started to favor late additions for extract. I had already planned to boil more vigorously than usual since I mashed the pilsner malt and was only boiling 60 minutes, and I didn't want the extract to darken.

    Kegged my Samuel Smith Winter Warmer Clone, and if it is as good carbed and chilled as it was flat, I will be a happy brewer! This recipe, from clone brews, really nails the flavor profile of an old ale.

    Spiced winter ale question

    This one turned out to be really popular, and the keg kicked last night. I was happy that everyone liked it, and a little sad when it ran dry. lol This brew actually turned out to be very similar to OHB's Christmas Ale, an old favorite of ours.
