    Well the book did mention that the beer would "peak" at 3 to 8 months and is cellerable for up to a year. If that's a bad strain of yeast then alot of their recipes are going to be off.....they recommend it alot in their high gravity recipes. What would you use that yeast for then? Wine perhaps...
