    I consistently hit 74-75%, and I am happy with it there. Recipes can be scaled, being able to repeat the process is the important part. I should also probably mention that I use a breweasy setup, if I batch of fly sparged I would probably get a few more percentage points.

    No shams, but we do have decorative pillows. They only get slept on if I have had too much and forget/don't care to move them.

    There is nothing wrong with having the cold break in the fermenter. You can strain it out, I did when I first started. Nowadays I whirlpool during cooling and let it settle In the middle of my brew kettle. I still get some cold break in my fermenter, but not too much.

    Whoops, I meant to quote the OP!!! That is what I get for having a few beers and posting. Do you have any recommendations on a TDS meter? I run without one now, but it would probably be a good investment.

    I have one that has been sitting since 1999..... On accident. Part of me wants to try it, part of me is scared of it!!

    Oh and most of the places have stickers on them that have the latest service date on them. The store by me changes the filters pretty frequently, which gives me a feel good on the water quality. And I also wish I could move to the country, at least you are close to the hill country!

    My suggestion is to go to heb, buy 2 5 gallon water containers and use their RO machines to buy base water and add minerals back as needed. There is a lot of science to adding the minerals, but there are some really good primer threads on the subject here on hbt.

    Make sure your racking cane hose goes to the bottom of your secondary, tha way there is less oxygen pickup. Not sure about doing a secondary in a bucket as the last time I did one was 1999 using glass carboys. I am sure others will chime in. Don't worry it's not going to ruin your beer, there...

    A big thing to consider is future upgrades. If you decide to go away from BIAB, having the stepped bottom is the way to go. It is the whole reason I went with blichmann kettles myself, and they have a great false bottom design. If spike had been around when I bought my kettles I probably would...
