    Ginger Saison question

Brewed this from the Extreme Brewing book. It says 10 days from brew day to bottling day. OG= 1.072. Took the gravity after 10 days and was only 1.034, need to get it down to 1.012. Have a small thermometer next to the carboy and have kept temps at 76-78F. Any idea how much longer this...

    Removing labels

Dogfish Head Indian Brown Ale is the easiest label to remove. Just another reason to pick up a 6-er! Soak in hot water for 30 min. Use a dish scrubber/scraper to get paper off, then a non steel-wool scrub pad (scotch-brite i think?) to get glue and date bottled on labeling off. I can do 12...

    Space heater for temp control?

Brewed a saison and fermenting it in an upstairs guest room closet. I have a portable space heater that oscillates and shuts off once desired temp is reached. It is digital and is kind of a set and forget it. Is this ok to use? Or should I be worried about fire hazard or high energy bills...

    Ginger question

Just brewed a ginger saison. Added the crystallized ginger with 1 min left in 60 min boil. When I poured it into the carboy i noticed the pea sized ginger cubes I added hadn't dissolved completely. I was following a recipe, do you think this is right? Or should they have been totally dissolved?

    Wort cooling question

Using an ice bath to cool the wort. I kept the lid partially on during cooling. Is this a no no? Noticed some of the bottom sediment rising and moving around so I removed it. What do you think?

    2 quick questions

Should you add cool water before or after you pitch the yeast? Does it depend on the style? Or not at all? Also, I brew on a 7 1/2 inch electric heating element on the the stove. I have a 7.5gal brew kettle that usually has about 4 1/2 gal of wort. With the lid off I get a boil but not a...

The taste of 2 day fermented beer

Just made a sugar addition 2 days into fermentation and tasted a little of the beer left over in my test tube. It's a strong brown ale. And it taste like fizzy beer with a real sour finish. Is this pretty typical? Also the light colored yeasty foam on top of the beer has gone down and is now...

When to add sugars during fermentation?

My recipe calls for maple syrup addition "a couple" days after brew day. However, it's been 2 days and the airlock is still bubbling about once a second. Should I wait for it to slow or stop before adding the maple syrup?

    Temp and OG reading

    Temp and OG reading

It was 3 gal @ 1.093, added 1 gal to make it 4 gal and it ended up at 1.052! Seemed a bit extreme to me too! Larry Legend = fantastic player. Larry Legend GM = ??? Granger was a good pick!

    Temp and OG reading

Haha. Ever see Breaking Bad on AMC? He had the same bottle bombs go off too. Funny scene. The recipe calls for the maple addition after a couple days after brew day. Have priming sugar for the bottling. OG was 1.052 after diluting a 3 gal batch (OG on that was 1.093) to 4gal. Didn't...

    Temp and OG reading

The airlock is still bubbling about once a second over 24 hours after pitching yeats. I'm suppose to add maple syrup a couple days after brew day. If it's still bubbling should i wait for it to die down a bit? This site is filled with kind, helpful people. Thank you.

    Temp and OG reading

If I measured my OG reading at 72 degrees how much should I add to my reading using a hydrometer that is calibrated accurately at 60 degrees? Also, I poured a gallon of top off water into the fermenter before pitching yeast, but didn't shake it up. Dipped my beer thief in to get my sample...
