    Not to pollute SuperiorBrew's thread with my own lame attempt, but since this thread inspired me, here goes. Did a run of 2 smaller slabs of bacon and 2 4# hunks of Canadian Bacon. I found 2 full AMNPS trays to be a bit overpowering on the smoke when done in a WSM, but it's very tasty nonetheless.

    Post pics of your smoker

    I've done 8 or 9 (can't recall) racks of spares on my 18.5" WSM. Get rib racks so you can stand them on their sides. There are some out there that can double as a roasting rack and are a good tool to have around.

    My experience indicates it is highly variable by batch... whether that be due to growing season, the hop yard (or portion of the yard it came from), or when it is harvested I do not know. I can only comment that across several pounds of it I have used, the variability is related to the batch...
