    Getting rid of "Fermenter Funk"

I've only brewed a couple batches, and I already have that smell in my fermenting bucket. I've soaked in Oxy clean for a couple of days, even diluted bleach, still smells funkie! I'm not gonna worry about it, as long as it's disinfected and clean, it should be fine.

Outrage over Flying Fish Brewery's "Exit Series"

Haha, that's great. :ban: I'm sure this is true! This is on Flying Fish's website:

Outrage over Flying Fish Brewery's "Exit Series"

It's funny how groups like MADD and legislators from states like Alabama and Utah fail to acknowledge that these beers are appealing to a generally older, more responsible demographic of craft beer drinkers, not irresponsible, young binge drinkers. No underage kid is gonna drop $10 on a sixer...

Outrage over Flying Fish Brewery's "Exit Series"

MADD is apparently outraged over Flying Fish Brewery's "Exit Series" beers, which are designed to celebrate the great Garden State of New Jersey by naming a beer after each one of the infamous NJ Turnpike's exits. Here's the AP article: The Associated Press: NJ brewery draws ire for naming...

    Harvesting brett?

I have a bottle of Ommegang Biere de Mars, & I was thinking about harvesting the yeast from it (Brett). I really dig Victory's Wild Devil Ale, and was thinking about possibly funking up an IPA. From my research, it seems like I would pitch the brett during secondary. I also read about lots...

    Apfelwein, what's the draw?

Hey Trojan, What specifically does this do, just speed up the yeast production? Any off flavors or anything? And how do you add it, crush the pills, or is it available in powder form?

    Vanilla/bourbon porter...hops question

I am interested in brewing a porter with vanilla bean and bourbon added either after a week or so in primary, or in secondary. I got a recipe from the LHBS for a "Colonial Porter". My question is, do you guys think I should substitute the Cascade hops with something with less "citrusy" notes? I...

    My first taste!

I just posted about a similar experience with my first ever beer. I tried it after only 1 week in primary, then only 2 weeks in the bottle. I was sorely disapointed. I thought I just sucked at brewing, haha. Then again after 3 weeks, it's like the flavors all came together. AMAZING what time can...

Just wanted to share my happiness

I bottled my first brew back at the end of May. I definitely made some n00b mistakes...forgot to sanitize the stirring spoon once or twice, couldn't quite acheive a rolling boil, had a little trouble with the siphon. I bottled only after having it in primary for a little over a week. I was...

    LME weight conversion??

Anyone have any idea what a quart of LME would translate into lbs? I'm starting my 2nd batch which is a 2.5 gallon recipe (cut in half from a 5 gallon recipe). I am using BeerSmith to try and calculate when during the boil I should add the LME (I've been told part of it at the beginning, and...

Couple more questions about 2.5 gal batch

I'm a new brewer, starting my 2nd batch..a dark wheat beer using some smoked malts. It will be a 2.5 gallon batch (due to my slow-a$$ boiling electric stove). My recipe is scaled down for exactly half of a 5 gallon batch. I've done a lot of searching on this topic, but I still have a couple...

    Half size batch questions

This thread has great info, I'm a noob and also have the need to brew in smaller batches. This is a great idea...do you fit the jugs with some kind of airlock?

    Partial boil??

I read that it isn't necessary to boil the top-off water?? Shouldn't it be ok to just use filtered/distilled water? I'd like to stick with 5 gal batches, & boiling the top off water would just bring me back to my original problem.

    Partial boil??

Hey everyone, I’m a brand-n00b, just bottled my 1st batch. My problem is I have a glass-top electric stove that takes forever to bring my 3-gallons of water in my 5-gallon pot to a boil, and it didn’t produce the desired rolling boil during brewing. I felt like I was brewing all day...

    Hello from dirty jerz!

Haha, I'm definitely not a runner. I live in Monmouth county...10-15 minutes from brewer's apprentice. I am finding that there are a lot of brewers in my area. Bobby, thanks for the invite! I won't be around this week though. I try to make it up to Harvest Moon in New Brunswick when I...

    Hello from dirty jerz!

Howdy from NJ! I've been big into craft beer for a while now, but I just brewed my first batch ever on Saturday with a nice setup I got from Midwest supplies and a recipe I got from a local shop...an IPA with Chinook & Fuggles hops. It's currently fermenting in my basement...keeping my fingers...
