Now that your primary question has be answered, I have to know about this full moon thing. Were you told that a full moon increases the amount of time fermentation takes? Did you read it in a book? I'm just wondering.

I haven't had any problems doing that so far. Water you buy from the store should be perfectly safe to use for top off.

I feel that my beers are not as good as commercials, but I am only on my 3rd batch. But then again I can barely make rice and I'm brewing drinkable (at least for me) beer.

Most likely just a bad seal on your lid. Not too much to worry about.

I have to say that I really really enjoy 21st Amendment Brewery's Hell or High Watermelon. In fact I would call it my goto beer for long hot summer days. Not too sweet and thirst quenching in a way that most beers usually aren't.
