    Man, I love Apfelwein

Ah! 3 days in WITH yeast nutrient added at day one and it just got the Rhino Farts!! Edit: It's only 2 days! I thought with the nutrient I was going to get around the farts. Maybe some enigizer also next time?

    Man, I love Apfelwein

Finally got my first 5 gallon batch started. Followed the recipe exactly yet added yeast nutrient. Slight problem...it was wyeast beer nutrient blend. Is this going to be a problem as this is wine yeast. Can't wait for 6 more months!!

    Hard Berry Cider Recipe?

Absolutely. I've done a raspberry cider and just started a mixed berry one. For 1 gallon I've done 1 cup berrys during primary and 2 cups during the secondary

    Spiced apple cider

I also recently made a spiced cider that was bottled 4 days ago upon bottling it was perfectly spiced my recipe? Just some trade joes spiced cider and corn sugar! This doesn't give you the flexibility to change the spices to your personal preference but its simple enough and tasted great!

    Joe's Quick Grape Mead

What is this nasty stuff?!? Some quick background: I made a 1 gallon batch of this exactly according to the recipe. After I racked it into another gallon jug to back sweeten, I added 1 gallon of Trader Joes Blackberry Crush right to the yeast slurry and added the honey. This nasty stuff formed...

Trying to ferment a juice high in potassium

I'd also suggest getting a book that goes into brewing/wine making. Way easier to gain knowledge then to try and get all your info from a forum.

Trying to ferment a juice high in potassium

When you bottle, fill and empty soda bottle. Once it gets nice and hard from the pressure build up, your good to go on stove top pasteurization. Just to be sure, crack open the soda bottle and make sure it's not a gusher. If its a gusher, too late to stove top pasteurize unless you open and...

    Rubber stopper smell

So I've been doing lots of experimental batches in 1 gallon jugs and have been using rubber stoppers with airlocks purchased from NB. The new stoppers have a really strong rubbery smell and when I recently bottled one of the batches the smell transferred to the cider. I'm hoping this ages out...

    Man, I love Apfelwein

So given that there are 700+ pages in this thread this question has probably been asked but not in the first 30 pages I read so bear with me. This will be my first time making a wine, I've done a couple beers and 10+ ciders. Has anyone tried this with raisins? It's my belief that these will...

    Caramel Apple Hard Cider

Yeah I'd leave it. Your just going to end up with a drink with less abv. Good news is you'll be able to drink it sooner even though it already tasted really good green

    Caramel Apple Hard Cider

Finally found some cinnamon extract. At Walmart no less!! McCormic brand. Guess this means I'll have to make my fourth 5 gallon batch this weekend!!

Can I pasteurise by heating my actual cider in a stainless pot to 150??

No, campden and potassium will NOT kill the yeast. If active fermentation is going on, campden won't do a damn thing.

When do you "flavor" your cider

I recently did a raspberry cider but with frozen fruit. I added at both stages, but doubled the amount I put in secondary. However, even when racking I could taste and smell the berries. With purée, I'm guessing you'll lose more of the raspberry taste during ferm then I did. Good luck!

They all said I was crazy.

Yea its pretty bad, had to wait 3.5 hours for gas two days ago in north jersey. I shall be riding my motorcycle in the cold until this ridiculousness is over. Thankfully the power came back on, just in time to restock and warm up the place before this nor'eastern comes Wed. night. A lot of...

    Caramel Apple Hard Cider

No reason you can't. Only thing with swing tops, every couple brews, make sure you replace the rubber gasket to maintain an air tight seal

    Simple Raspberry Cider

So just a heads up, bottled this the other day. Ended up not back sweetening due to every supermarket being closed cause of the hurricane (glad I had something to do with no power). So far I really like it, strong raspberry nose and flavor with a hint of apple at the end before the alcohol...

    Joe's Quick Grape Mead

Yup, you were right. Honey is no longer settled on the bottom. On the other note, had to put a blow off tube...this bad boy is fermenting like crazy!

    Caramel Apple Hard Cider

So I'm on my 2nd 5 gallon batch. First one turned out great. However, this batch has been fermenting for a week and is almost at 1.015. Problem is, it smells a little sulfery. It had the rhino farts real bad for about a day and a half but it still has that residual smell. This didnt happen at...

    Joe's Quick Grape Mead

So I just started this recipe last night and tried to mix the honey in the grape juice before putting it my in 1 gallon car boy but it seems that all if not a large majority of the honey has settled on the bottom. Is this normal/ what should I do to residents the honey? This is only my 2nd mead...
