    Turbo Cider Oak Experiment

Ahh I'm a bit nervous. I was on vacation the past week and I figured it'd be time for racking onto my oak chips when I got back. Pulled off the paper bag covering my gallon jug and...the airlock was on the floor! The good news is that the cider is clear and nothing is growing in it. I'm hoping...

Making Traditional rice Wine. Cheap, Fun, and Different

So what I feared has come true. I've been on vacation for the past week but started a batch before I left. I've been following the thread (thank you wifi) and I just knew I'd come back to black mold and nail polish remover. Low and behold, that's what I've got. I know what in going to change in...

    Banana Wine

Been watching this thread for a while, just been waiting to move out of the current apartment so I have the time that this drink requires. Can't wait!

    Skeeter Mead

Using straight loose tea is an interesting choice. Have you done it before? I find that if I steep tea too long the resulting flavor is somewhat harsh. The hot water may contribute to this but I'm not sure. I've only ever used brewed tea for added tannins but this sounds like it could get the...

Making Traditional rice Wine. Cheap, Fun, and Different

So I'm on vacation and dying to know how my rice wine is doing but it'll have to wait until Friday. I've been wondering about this mild though...it seems that some have been getting it and some not but the people with no mold are still getting good rice wine. I'm going to do some research when I...

Very interested to see how the honey and lemon flavors combine. By any chance, did you check the ph level of the mixture?

    Let the Mad experiments begin!!!

Ah you shoulda picked up the cranberry pomegranate juice they have. I fermented the juice with a bit of brown sugar and man was it tasty right after bottling(if you like the tartness of cranberry). Good luck with the experiments. I've yet to ferment any juice that didnt taste great

    Caramel Apple Hard Cider

I haven't used sticks but I've replaced using powdered cinnamon with cinnamon extract. I found mine at Walmart, made by McCormick.

It really doesn't, just needs enough time to cool...which a day is plenty of time for

Milk-Mead (a spin on koumiss) instruction, recipe & info

You remember your cheese making correctly. UHT and UP milk has been heated to such a high degree that the whey protein is disrupted so you often get a very ricotta like curd. Most organic milks are UHT or UP. That being said, I think I may have gotten lucky. I used UP organic lactose free milk...

Milk-Mead (a spin on koumiss) instruction, recipe & info

Yeah I'd let it ride and see what happens. If its bubbling, that's gotta mean something's happening

Milk-Mead (a spin on koumiss) instruction, recipe & info

That's interesting... Mine curdled within the first 12 hours. What is UHP milk? My milk was UP ( ultra pasteurized). I know for cheese making that usually doesn't work but it seems to be fine with this mead

    Caramel Apple Hard Cider

When you were bottling was any of the syrup left at the bottom? My first time doing this I had the same issue but noticed a lot of the syrup hadnt mixed in. So my 2nd time I slowly stirred the mixture in the bottling bucket the whole time I was bottling

Making Traditional rice Wine. Cheap, Fun, and Different

I just don't trust it, it thinks it can just do whatever it wants every time I have my back turned. I do love going away and coming back days later and seeing the progress that has been made. It goes by so much slower when you check on it

So my yeast balls came in the mail today. Unfortunately I'm going on vacation for the next 10 days starting tomorrow. While I'd like to watch and document my first batch, do you guys think its ok to start this tonight and leave it unsupervised for 10 days?
