I have searched and read and re-read...

From the looks of it you have hard water, but it's not that bad. Generally, hard water can add a little bitterness and is good for IPAs and saisons. Pilsners and other lighter-bodied beers benefit more from soft water. Limited bits of knowledge, but I hope that helps. I started diluting my own...

    Fermentation head space? How much?

Ended up only putting in 5.5 gallons in the 6.5, and it looks okay so far. I've never used a blow off before. I'm gonna run to the store today, and get the tubing and such. Thanks for the advice.

    Steeping of Specialty Grains

Ended up steeping with two bags. It's the process I'm most used to, though I'm looking forward to going all grain next time. Added a pound of the 2-row also. I'm just about to start the boil and everything looks great so far. Solid 153 for one hour. Ended up subbing light LME for the rest of...

    Fermentation head space? How much?

I'm looking at a 6 gallon batch right now, and hoping it'll fit in a 6.5 gallon carboy with California ale yeast. Temp will be something around 68F-70F. Any thoughts on if it'll be okay? I've always had more than enough space with 5 gallon batches, but 6 gallons makes me a little nervous.

    Steeping of Specialty Grains

I'm able to maintain a relatively constant temp, so it doesn't seem like there would be any problems. I guess I was just wondering if this process would yield any negative side-effects.

    Steeping of Specialty Grains

I'm working on going all grain, but wanted to start something in the meantime. I found Jamil's American Amber recipe (http://beerdujour.com/Recipes/Jamil/JamilsAmber-RedAle.htm) and wanted to give it a shot using extract in place of the 2-row. Here's the full grain bill: 74.5 9.50 lbs. Pale...
