    Yes, your hop utilization will suffer if you boil a smaller volume. You will either have to compensate with more hops in the one batch or you could split the hop schedule among the batches. That is only because it sounds like you maybe cant boil a 5g batch in one pot.

    Carbonation differences - bottle vs keg

    You sure can naturally carb in a keg, that will however produce trub and take time at room temp unlike force carving with gas. It's perfectly doable, however that are reasons that so many people force carb in the keg :)

    5 gallon batch in 12 gallon carboy

    Why not do back to back brews or days and end up with 10g in the carboy? I agree that it shouldn't be an issue to primary 5g in there, but to me it would feel like a waste of space not to put more in there. Worst case, all that extra air might give you some of the quality's of open fermenting?

    I've made cider that clears within a week and cider that won't clear after 3months until I keg and chill for a while.     And baking/scrubbing won't clean stainless steel sufficiently? The TC parts have been used, all of the coils are factory defects that were scrapped for cosmetic reasons from what I can tell.
