    Mine's about 66.

    How good are your lagers?

Just sitting here drinking a Pilsner Urquell and I'm wondering, from those of you who brew lagers, how good are they compared with the "legendary" commercial varieties? I was reading the other day in Brew Your Own about the origin of the stuff and they're pretty reverent about how it is made...

    German yeast and long ferments

Wow, it's been a week now, and still going strong. Hopefully, this one's going to be a good one.

    German yeast and long ferments

I brewed a kolsch on Sunday and it's still bubbling away here on Friday. I seems as though whenever I brew a batch with German yeast- kolsch or German Ale Yeast- I get really long ferments. Other varieties of yeast tend to be pretty vigorous for 24-48 hours, but then pretty much fizzle out. Two...

    Kolsch yeast sure is messy!

It depends. The extract batches I made were golden in color and after they had a chance to age for awhile were crisp, a bit fruity and kind of lager-like. This is my first try at an AG kolsch. I suspect this one will be a very pale one, maybe even a little like a wheat beer.

    Kolsch yeast sure is messy!

Looks like my batch is going to be more like a 4.5 gallon one if this keeps up! I checked it again 2 hours later and my jar had filled up and overflowed again. I switched it out for a gallon pickle jar this time.

    Kolsch yeast sure is messy!

I brewed up an AG kolsch yesterday and went downstairs this morning to a bit of a mess. The jar that my blowoff tube is sitting in had overflowed with a bunch of milky, scummy, yucky stoff onto our kitchen table. I can't remember that ever happening before with a 6 gallon carboy. I had...

    Oxford Mississippi

Probably no one. They probably have quite a few stills back in the woods, though.

    Canine intelligence?

On the other hand, we also had a golden retriever who, although she was the sweetest thing you ever met, was also dumb as a box of rocks. We have to keep our cockapoo on a chain when he is outside, because our fence has a couple of openings that he can get through. Our golden, however, would...

    Canine intelligence?

Every time our cockapoo does something so annoying (like throwing up all over our oriental rug) that it just totally makes me wish he wasn't already neutered (so that I could do it to him myself with a serrated steak-knife), he soon follows it up with something else that makes us love him again...

Point Cascade Pale- Tap vs. Bottles

Last weekend I was out at a restaurant and I ordered a couple of pints of Point Brewery's Cascade Pale Ale. I liked it a lot. It had a noticable taste of Cascade hops and was just generally pretty good. When I got home I went out and picked up a sixer of bottles of the stuff. Tried one and...

"Brown coloured liquid?" Gimme a break!

I was reading this website about how Irish whiskey is made: http://www.classicwhiskey.com/making/mashing.htm and I found a part that really cracked me up. Apparently Irish whiskey is made from water, barley and yeast. So... it's basically beer, less the hops, which is then distilled. So I get...

    Can you hold your liquor?

When I was in college (back right after the end of the Civil War) I was a member of the band. It was pretty much a party organization first and a musical entity second. Anyway, there was this 110 lb. flute player who I recall being sort of hot. She was reputed to be able to drink any guy under...

    Can you hold your liquor?

I was out at a restaurant Saturday night with some folks I don't really know very well and this guy next to me ordered a 25 oz. Bud Light. It took awhile for us to get our food and during that time I drank two pints of Point Pale Ale. I didn't really feel tipsy at all from my two beers. The guy...

    Buying an apartment...going insane!

As someone else noted, in Sweden it sounds like buying an apartment is just like ebay. Well, Henrik, if that's the case then pretending you are buying on ebay is absolutely the best way to go about it. When you find apartments that you would like to buy, decide on the highest price you are...

    The "good" old days?

Reading about all of the interesting recipes here to me to thinking about how much things have changed in my life when it comes to the food we eat. When I was growing up in the midwest back in the 60's we had plenty of good, cheap high quality food, but it was all pretty much the same. Lots of...

    Do you sanatize your caps

I have boiled my caps, and I've also just soaked them in sanitizer (Starsan). I haven't had any problems with either method.

    Holy unfermented wort, Batman!

I wonder if I should consider bringing it upstairs where it's warmer in the house. My basement was probably about 58 F when I made that batch.

    Holy unfermented wort, Batman!

I've been brewing for, what?, about 3 years, and a little over a year AG. I've made my share of "uninspiring" batches, but, until now at least, have never made a dumper. Today I was transferring a pale ale to the secondary and, as I usually do, siphoned a bit into a glass to taste it. Well...
