    7 days past recommended bottle date

    I dont understand how instructions can tell you when to bottle your beer. It all depends on fermentation time. I have bottled a couple batches after leaving them in secondary for more than a week and they came out great.

    Mosaic/Nelson Sauvin Pairing

    I brewed an IPA using only mosaic hops and it came out great. Kind of grapefruity, but I think it would work well as a summer ale. Gonna experiment with Mosaic and a couple different hops when I try my first AG brew.

    What are you doing instead of brewing this weekend?

    mowing my lawn (I love it), barbecuing, playing MLB 2013: The Show, and golfing. Currently enjoying Sam Adams Summer Ale (my fave). Plan on cloning it next year. I will admit that somewhere in there, I'm going to be bottling my pilsner.

    Nah, I store each batch in the same box in my beer room with the temperature set at 68 degrees.

    I boil the sugar for 3 minutes, let it cool and then dump it into the bucket first. I'll try stirring, but like you said, I shouldn't have to. the swirling should be enough.

    I would probably even use it for a stout, not that I will ever brew one, don't like them. I do, however use it with my Porter though, and definitely would with a Pale, although I haven't tried brewing one yet.

    25518 - Irish Moss is used for clarity, and I highly recommend it, unless you are brewing a beer that is supposed to be somewhat cloudy. I.e. hefeweisen

    Carbonation Question

    I was wondering about stirring it. I've heard you aren't supposed to and just leave the priming sugar on the bottom. I will stir it up next batch and see how it goes.

    Carbonation Question

    I've bottled 8 batches now, using priming sugar for carbonation. Every single batch has carbonated unevenly. Some bottles will be ready in 4 weeks, some need 4 more weeks at least. Is there a trick to getting it to carbonate evenly? Should I be using something other than priming sugar?

    I cannot relate, I live in Oregon which, is not only a beautiful state, but pretty relaxed on home brewing. Also, I can't think of a better state as far as micro breweries.

    Ok, sounds like it isn't too big a deal. I didn't end up with the full volume. I had to add water slowly to the boil, being careful not t lose the rolling boil. Thanks!
