    I measured it again today and its 1.000 now. hahahahaha! Still tastes ok tho. Bitter, but not unpleasant. Hopefully once I get it carbed up it'll be fine. The worst case scenario is that it is a lesson learned. From the sample I took to measure the gravity, it will still be a nice beer...

    It was a partial mash. I didn't wait for it to finish before adding the enzyme. Was just looking for a drier beer. Guess I should be careful of what I ask for. Thing the maltodextrin will convert and ferment if added now?

    Five types of hops to keep on hand?

    I think my favorite hop is chinook. So versatile. Bittering, flavor and aroma. Its good from a FWH to a dry hop. If I needed to keep a stock of hops, it would be: chinook centenntial simcoe motueka pacific gem wai-iti EKG Pretty versatile group there. You could brew a lot of different beers.

    I'm confused about late addition

    Unfortunately, you wont get a general consensus on this topic. I saw a Basic Brewing episode where they tested two identical beers, with the only difference being the extract was added for 60 mins in one and in the other the extract was added with 15 mins left. The result in a blind taste...

    Congrats on the first brew mate! I doubt I would have kept with the hobby if the first beer killed me. Thankfully, I now have a few brews under the belt. :)

    I agree with the other lads who recommended adding hops. You could make a hops tea and add that to the beer as you drink it. Either that or pop open the keg and add it to there.

    First Post, Newbie questions inside!

    If you think you might be addicted, you are already gone my friend. :) I dont use a secondary fermentation. I leave it in the primary for approx 3 weeks. Its a good technique. I still get really clear beers. Racking to secondary just seems like an unnecessary PITA.

    tossing out the training wheels

    Move to AG once you decide that extract brewing doesn't give you the results you are looking for. For some folks that is never. For me it happened 2 brews ago. I'm slowly putting together the equipment. I have a mash tun and a 50L pot. I just need the outdoor burning equipment now.

    I wouldn't try and fix something like that during secondary. Dont worry, 45 isn't that high. It actually sounds like you've made a happy mistake. It'll be a great beer!

    The oil feeling could be from the hops. It will settle out. Time in the bottle and carbonation will make a huge difference. You cant judge your beer just yet. As Don advised, let it bottle condition, then try it again. If you aren't taking a gravity reading, wait an additional week before...
