    And 30 minutes is an ok time. Smaller craft breweries take that long just because of the quantity of wort they have to chill.

    I have a wort chiller and yes it's worth it. After I got my wort chiller, I got a fountain pump and (replaced it with a swamp cooler pump when the fountain pump died) so I could recirc my water. Now I'm starting to get ready to need a bigger chiller so my next plan will be to use my wort...

    You'll have to forgive me because I haven't done an extract brew in years, but the list I have from Beersmith says the Carapils doesn't have to be mashed so yeah, I'd steep it. As to the amount...I'd look around at some of the AG recipes in the forums for porters and see how much they use, but...

    I know this isn't the answer you want to hear, but it depends on the barrel. I wasn't too much a part of the bourbon barrel aging process so I couldn't tell you how far we took barrels, I just know that I liked them better after the second filling. We did however use them multiple times.

    I didn't look at your links, but the recipe I have has a WLP380 as the yeast, and a fermentation temp at 68, and from what I understand it's pretty important to the flavor. I've never made the clone, but that's what I'll assume you need to do (it's from BYO).

    Oh, and right or wrong, it's just what we did...so if someone has better answer or you want to try something else, by all means do it. I'm just sharing from my experience.

    Yup, but if you add bourbon, you'll be adding flavors to the barrel you may not want. Plus it's expensive to fill it up with bourbon. It's all a catch 22. In the grand scheme of life though, I never liked the taste of beer we got from the bourbon barrels until the second time we filled them...
