    Infection???

Kegged, great! Its much easier to blend beers when they are in kegs. I'm still not clear on where the harsh taste came from. Could it be that the beer is too young? Natural carbonated beer less than 2-3 weeks in the keg might cause this.

I use pelet hops because they stay fresh longer, and they sink for the most part. I use hop socks.

    Infection???

I have a few q to add: what temperature did you ferment at? The reason I ask, Lower temps produce less esters. Also, is this kegged, or bottled currently? Last one, when you say harsh, you mean harsh like sucking on a tea bag, metal or like green apples? To answer some of your Q 1. No. 2...

    Yeast question

I can tell you that WPL-001 is the same (or nearly so) as safale-us05 Fermentis - Home Brewing Wiki You can save a few coins there. I highly recommend experimenting with other liquid yeasts. I used this yeast in a brown, and it turned out to be very tasty: White Labs

fermentation is stuck, not sure how to fix it

I would recommend that you raise your fermentation temp to 68-70, depending on the yeast that you used. Gee, I was just checking, and some of the lager yeast ferments as high as 58 F! some of the ales as high as 76F! See if your yeast is here: NORTHERN BREWER: Dried Yeast and raise your...

    Storing in growlers

Personaly, I think your fine, don't worry. If when you poured it it was a total foam fest, your beer will be pretty flat. If when you poured it into the growlers with very little foam you wont loose too much carbonation. Eh its still beer. I was drinking an Avery 2 weeks ago (good bless...

crap. I forgot to oxygenate the wort!

I used to never oxygenate until I read palmer's book in 06. I usually brew around 4-6 abv without issue.

Another good brew, but a couple of questions.

I haven't ever had my swamp cooler able to cool below 68 deg F. Theoretically, you can get it to 58, which is pretty close to lagering temp. Here is an efficiency chart: Evaporative Cooling Humidity Index I lager in the 38-50 range, with a brief (2 day) raise in temperature to 60. I did...

That looks great to me. I cant really say anything about the price, its been so long since I bought a beer kit. You will also need to order bottle caps, and a caper with your kit. Additionally, you only have 48 beer bottles in this kit, which is 4.5 gal or 17.something L. You would need...

    stirred yeast

I dump my yeast in all the time, then shake the primary. I'm not sure why they say to "sprinkle".

    Fermenation time for big beers

I would continue to rouse your yeast daily for another week. If your FG doesn't fall after that time, I would pitch some more higher attenuating yeast.

    I'm a little ashamed...

3 months is nothing, dont worry about it. https://www.homebrewtalk.com/f13/over-6-months-primary-raison-flavor-114146/ Noone in this thread said anything about yeast autolysis, which I assume is your concern. 2 years ago I did a barley wine that lasted over 1 year in a primary, and it was fine.

over 6 months in primary=raison flavor?

"What color crystal?" The crystal I used was 40L, can that cause a raisin flavor? "If this beer isnt clear thats just odd. Sanitation issues?" I think my sanitation is alright, not great. I use idophor and rinse out my stuff with boiled water. I use some leftover boiled water to...

over 6 months in primary=raison flavor?

This is the second beer that I have done like this. 5 months of saying, "eh, i shold relaly keg that beer... mabie after 1 more round of Call of Duty" 6 months later I was looking for some beer and said, "Gee, I got 5 gallons sitting right here." So, I kegged it, and force carbed it. It was...

    hello and help

How much would you like to spend brewing equipment and your first recipie kit? I think today you could get away with spending as little as $40 on a first time setup, and $20 on a recipie kit.

    secondary fermentation

If you are close to your target final gravity, I would bottle. Otherwise, I would move the carboy with you to your new location. I moved a barley wine in a glass carboy in the front seat of my car. I also moved my entire brewery over 1000 miles, but I used kegs in that instance. If you do...
