Been busy with life, finally brewed a batch in my new electric system. However, boiled it to hard and boiled off 2 gallons instead of 1. Curious what you all set your temp at for boiling, or is it one of those just mess around a few times to figure it out?

So I had to go out on a week long work trip. Today is bottling day (just got back a couple days ago). I went in to get the beer and take some readings see if it was ready. Noticed the blow off tube is out of the water. So might be exposed to air.. Is it ok to still bottle or should I just dump it?
