I have two 10 gallon fermentation buckets that I will be using for blackberries this year. A few of my neighbors have large wild blackberry patches that I can pick from. As long as they get a few bottles of the wine, they will be happy!!
Three weeks is way to early in my own opinion. I have a kiwi strawberry wine that I have started about 2 weeks ago and it's not even close to being ready.
I have heard about bottle ageing but... The wine is usually around 3-4 months old before they bottle it.
I bottled my blackberry right around 8 months after I moved it into my secondary. The thing is, I was debating if I wanted to oak last year but I didn't. This years blackberry, I will try out the heavy bodied recipe and oak it.
I would throw it all away regardless if some got in or not. Insect repellent is poison and I don't think you would want to get someone sick or even yourself. I have found that insects don't like the smell of potassium metabisulfite at the cleaning amount... 150 ppm (2oz per gallon of water)
My last batch of blackberry wine that I made, I used EC-1118. I had no problems and it turned out great. I have it bottle aging now and hope to open one on New Years Eve!!!
As of right now it needs to mellow out, There is a lot of alcohol and a strong aftertaste. I will give it a few weeks then I will back-sweeten with a little syrup.
If this ends up working, Go to Walmart and get a bottle of soda syrup. Its called Soda Stream. There are many flavors that you can choose from and each bottle will make 3 gallons of soda. That's what I did with their Fountain Mist "Mt Dew" flavor.
I have an experiment that I have been fooling around with, Mt Dew wine. I used the syrup and made 3 gallons of it. The other day I had stabilized it and this weekend I will be adding Super Kleer. It's been a fun project but man... It tastes like rocket fuel!!!
You know, I have had a lot of fun playin around with this Dew wine. I even told my wife that it tasted bad, I could dump it without getting upset because I have maybe $15 total into it.
If this really turns out good after back sweetening with the syrup, I will invest in the 5 gallon box for...
