    How large is your cooler now? Is it a rectangle cooler?

    What do you do during the mash?

    Only when you're putting the grain in, otherwise you just let it sit. Especially if using a cooler as a mash tun, you don't want to be opening it so it holds temp better. Dough balls only (I believe) form when you don't stir as you're pouring the grains in.

    Curious how this turned out? Have you tried it? This is one of my favorite beers to drink, I find it pretty unique compared to a lot of the beers available.

    Having made a pumpkin ale last year, your spice amount seems really high to me. I think I used 1 tsp or less total of spice for a 5.5 gallon batch.

    http://brewerslog.appspot.com/HopAlphaCalc Check out this small script I wrote that will help you calculate approximately how much AA is left in your hops. It is going to vary a lot based on the age, storage conditions, and the type of hop. Some hops lose AA much more quickly than others.

    I think the best thing you can do is to pick a project, break it down into small components and start looking up information on building each component on google. After you get them all working individually, put them all together and get them working.

    How large is your chamber and is your fridge really a mini fridge? (How many cubic feet is/was it?). 3/4" seems like a really minimal amount of foam, I would look to something closer to 3".

    This is what I did as well with the same results. A way overpowering coffee flavor originally then after time it mellowed out nicely. I also started w/ Jamil's Robust Porter recipe.

    I am looking at some of the calculators and equations for figuring out the AA loss on hops over time. I can find values for HSI for pellet hops easily enough and I am wondering if there is a standard way to convert that information for leaf hops/whole cone etc?

    I didn't take them off today, they were full. Multiple disconnects and posts are the issue.

    I took everything out of my kegerator today to mount my regulars and manifolds onto it and clean it out real good. I cleaned all my lines, quick disconnects etc. I know really well which is the gas and liquid lines. I am having a really hard time getting the gas disconnects on any of the kegs...

    Fermenting in Plastic pails for months - how long?

    I got lazy (ok, REALLY lazy) and left two beers in plastic buckets on the yeast from the end of April until August. I am still drinking them and they both taste great, a Oatmeal stout and Wee Heavy.
