    What's the purpose of the honey? If you add it during the boil, it will just ferment out all the way and dry out the beer. Even in secondary, you won't get as much honey as you seem to be looking for. I have found that honey malt will give a much better honey character than actual honey.

    Absolutely not. You're still within the style guidelines for an Amber. It may throw the IBU's a little out of balance, but you'll be fine. Probably not. Everything in your kettle should have been sterile from the boil. Just go ahead and pitch. Those yeasties will take care of business...

    Also, you might want to think about mashing a little lower (like maybe 148 or 149) but be sure to mash for 90 minutes to get full conversion. These beers are supposed to finish very dry.

    I would drop the late addition and bump the bittering addition to 1 oz. Hop flavor and aroma are inappropriate for the style. Other than that, you're looking good. Good luck! :mug:
