Winter Seasonal Beer Great Lakes Christmas Ale Clone

I brewed this recipe almost 5 weeks ago and just racked it from primary to secondary last weekend. It had a fantastic aroma to it and the S.G. at racking put it at about 7.3% ABV. Truly a winter warmer for sure! :drunk: Going to give it 2 weeks in secondary and then put it into cold storage for...

    Autumn Seasonal Beer Punkin' Ale

As a few others have mentioned, this is a great recipe and I would most definitely use the pumpkin in the mash. It adds a wonderful color to the brew.

    Grayslake, Illinois

I live just south of you guys in Lake Zurich. Nice to see fellow brewers in the area. Maybe we should start our own homebrew club in southern Lake County. Anyone interested?

    kegging elitism

I have both bottle conditioned and kegged beers and can't tell any real difference, except, when drinking a freshly keg carbonated brew. When kegging, the rapid injection of CO2 into the beer will change the beer's PH for a few days until things "settle down" again, other than that some people...

    Autumn Seasonal Beer Punkin' Ale

I brewed the pumpkin ale recipe 6 weeks ago. Racked it into secondary after 3 weeks of primary and added gelatin last Saturday which brought beautiful clarity to the batch. Racked it into a keg last night and going to put the CO2 on it tonight. F.G. was at 1.022 which brings it in at 5.9% ABV...

    Autumn Seasonal Beer Punkin' Ale

Hi , I just used gelatin in my batch of pumpkin ale and it did a GREAT job of clearing the beer. I used 1 tablespoon mixed into 2/3 cup of water. Let the mix sit for about 20 minutes to "bloom". Then heat the mix (15-20 seconds at a time) stirring after each heating session, in the microwave...

Rethinking My Sanitation Practices (Persistent Infection)

I'm so glad you finally found the problem. Nothing worse than going though the time and expense to brew up a great beer just to have it trashed by a infection. Take note fellow brewers...everything, without exception, that comes in contact with the wort after cooling MUST be throughly...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

I did indeed brew this recipe over the weekend. BeerSmith calculated the O.G. at 1.069 and I hit it spot on. Used 3/4 oz. of ginger root cut up into about 6 cubed pieces. Placed the ginger root along with 2 cinnamon sticks, which I broke up, into a muslin bag and boiled them for the entire 60...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

I plan on brewing this recipe this coming weekend to insure it's ready for Christmas enjoyment. I did check the Great Lakes website which states that they use Mt. Hood and Cascade for their hopping schedule so that's what I'm going with. I'm going with the Mt. Hood for bittering and the Cascade...

    Clarity in Question

Whirlpooling with a 10 minute rest and then cooling the wort as quickly as possible with a wort chiller and then siphoning the wort from the kettle into the fermenter has worked wonders for all of my beers. As others have suggested a good cold crash and the addition of gelatin a 48 hours in...

    Autumn Seasonal Beer Punkin' Ale

Reno, I did pretty much the same thing. I let the pumpkin cool to about 150°F and then added it to my mash. I had no problem hitting or maintaining my temperatures at all. Just a suggest to those that are having a low temperature problem during your mashing.

Need something better than cardboard for storing bottles...

When did this happen? I just bought four 24-12oz. cases from them about six weeks ago.

    Autumn Seasonal Beer Punkin' Ale

Hi Reno_eNVy, Brewed your pumpkin ale recipe this past weekend with a few minor changes, i.e.; used 9 lbs. of 2-row instead of 10 lbs. (was coming up pretty heavy on BeerSmith at 10 lb's.) and used the Wyeast 1056 with a starter instead of the dry yeast. The brew still came in pretty big...

    HBT Brewing "Dream Team"

Couldn't agree more with that selection, but I would also have to include bobby_m in that group. I have learned so much about all grain brewing by reading his article and following his exact procedures my efficient is always in excess of 84%.

Rethinking My Sanitation Practices (Persistent Infection)

I have read through your entire thread and it would appear that your problem is stemming from the reuse of your yeast. I would toss out all of your current yeast and start over with fresh. I have heard of this problem and most of the time it is caused by the washing and reuse of some types of...

    Quick Kegging / Carbonating question

Hi jflongo, Just curious on how your beer and it's carbonation turned out. Let us know if things worked out.

    So who's brewing this weekend?

Going to brew the all grain version of my Marzen Oktoberfest style lager also know as Zurichfest. Got to get a batch ready for the autumn season that's coming soon. Was going to brew a pumpkin ale, but my brewing partner hasn't come up with a recipe yet.

    Quick Kegging / Carbonating question

What type of beer are you trying to carbonate? With your regulator set up at 30 PSI I'm afraid you might over carbonate your brew. Try using a carbonation chart to set up your regulator for the correct carbonation based on beer type and the temperature you're carbonating at and you should get...

Need something better than cardboard for storing bottles...

I have purchased several beer cases from C & W Crate Co. They are great cases made from corrigated Polypropylene and designed just like the beer cases from years ago including the hinged lids. A little pricy but they are very durable and should last along time. Here's a link to their website...
