There have been times in the past where I've had grains milled and didn't use them for upto two months later without any issues. Past that though I can't really comment.

Maybe it was the milk I used or the amount per label but the bottles did smell "ripe" while I was removing them. It wasn't overpowering but definitely in the vain of "there's something stinky in here". I'm just chalking it up to an experience, next time I'll use lowfat.:D

So I pulled out another bottle tonight to try and what a difference a little time makes. Almost zero bitterness right now and the beer is extremely drinkable. It's damn near one of my finest brews yet. Just another reason to never give up on a batch.
