    AG newbie - Dunkelweizen

    I've been AG'ing dunkels for a good amount of time. everything looks great, but the color wont hit the class. Personally, to still give it a nice body and color i would use carafa special II. I also would use more munich and lower your 2-row. I know you're new to AG but decoction mashing...

    LOL. reminds me of when my wife added a 2oz bottle of irish moss to my boil. Note to self.....keep her out of my kitchen and I'll stay out of hers!

    First batch, screwed up I think (too cold to pitch?)

    just make sure you dont add the ice to the wort. What you might of seen is whats called an "ice batch". What you want to do is put your fermentation vessel into a larger tub and then add ice around your vessel. I would head to HD and just buy one of those tubs you use to keep a keg cold.

    I know that feeling! About 8 years ago when SWMBO was in med school I was extract brewing at that time. I had a boilover and said screw it, finish up, I'll clean it in the morning. She got home from work a 4am and banged 2 pans together in the bedroom to wake me up and go clean HER kitchen...
