    Yeah, dissolving the bottling sugar in water makes for some more peace of mind and more consistent carbonation. Do remember to boil the water first, though. It would be a real shame to go and contaminate things so late in the game.

    Thanks for the tip. I think I was relying too much on the crystal for sweet/maltiness. Vienna sounds like exactly what I'm looking for. If I ditched the 2-Row for 2 pounds of Vienna, and went down to a pound of Crystal, say 40L, do you think that would make for a better recipe?

    Don't see why not. It should help strain *most* of the hops solids out of your wort when you're ready to transfer to your fermenter. I like that better than the nylon mesh bag I used last time, just for the fact that it looks WAY easier to clean.

    All Grain without a tun?

    I recently had a lot of success using my bottling bucket and a big mesh bag as a makeshift mash and lauter tun. That was a partial mash, but the principle oughtta hold, right?
