    I hot steeped 2 bags to get more flavour in there. Might have gotten less tannins by cold steeping though. I'll try cold steeping on the next batch.

    I just sampled the half bottle that was left after bottling. Yes, I cantaste the tannins. But Gooood does it taste good! The other spices, like cardamome among other things, add even more flavour to the mix. I can't wait for it to be carbonated and pasteurized. :D

    I just did my caramel to bottle tomorrow. I made a variation though. Instead of adding 1tsp of ground cinnamon. I steaped some "bengal Spice" herbal tea in the water before adding the brown sugar. This stuff: (click image for description) The caramel tastes amazing! Can't wait to bottle.

    First time keggin, a couple questions

    1:Use some soapy water (or starsan) on every coupling and joint on the keg to see if it's leaking from somewhere or not. 2:I think this thread should help you with your second question: Force carbonating illustrated

    Tank Question

    It should'nt be any problem. It's even better in a way. The CO2 will be at a higher temperature, so it will have more pressure and will and will last a little longer.
