    I really like this beer since it is my favourite commercial one. I guess I should try making a clone myself and not buying a kit online then! I'll get pretty close with bitter orange and coriander. Maybe adding citra/cascade or even centennial.

    Not worth the storage! Put it all in. An extra pound in that case will not make a huge difference. You can also think of addind slightly more of everything to keep a good ratio and do a stronger beer.

    The rickards white or blue moon is 5.1% and getting 1.050 ish brings it up to more than that. Is the taste affected? Can you feel the difference? OG should be around 1.048.

    I never heard about it but it seems really, really nice! I just wonder if the beer will be very acidic with this kind of peel added. Could you add the recipe in here? My first 2 brews were kits, then switched to mini-mash for the 3 after then went to all grain! Much more fun. You have to try it...

    Lambic Specific Gravity

    34 points is very low for any kind of beer. Especially for an extract where the FG will probably be higher than an all grain batch. It will give you a beer with less than 4% ABV. Maybe you took a bad reading, did not add enough LME or DME or put in too much water! There is a lot of recipe here...

    I use a bench bottle capper and never had any kind of trouble with it. I believe it is about 35-45$. If your capper is still close to new, return it and buy this one :rockin:

    Would you remove the valve from the fermentor before siphoning?

    Same thing here. Every time I bottle I take the lid off, put the siphon inside and the lid stays off for the entire time. Chances your beer gets an infection are pretty tiny if you don't go all out Charlie Chaplin style

    You could always bring the 5.5lbs of brewers malt to 9lbs. I think it would do the job. If the OG is still not high enough ---> any kind of sugar before pitching the yeast

    Adding corn sugar or DME would do the job. You have to understand that raising the ABV that much will affect the taste and body and none can predict the effects on the beer.     Using different types of sugar may change the taste in the end. I would not recommend using brown sugar in a light lager for example.

    I did a couple brews without boiling the priming sugar. If you can keep the humidity out of the bag you will be fine
