    Wort Temperature and Pitching

    I have had good success and zero stuck fermentations and I have pitched always in the 64-66 degree range. I do see that fermentation takes off slower (~24 hrs. after brewday completion) but the taste of all my beers has been good.

    Patience is the hardest thing about being a homebrewer. PS I always pitch yeast at about 65. 75 degrees is too high and will cause your beer to ferment too fast and produce fusel alcohols which are non tasty. If you keep the ferment temps between 64-68 the entire time your beers will come out...

    It sounds all good to me. Just be patient and let it ride for 2-3 weeks total. Just because you can't see the yeast working they are working. :)

    You are spot on Ardy. This round I just had some extra cash I could throw at this swap so why not? As for the rules.... I think all these swap-a-ramas should also have a "Must include a homebrew" if you are a brewer rule. I had an apfelwein from Splattsmier last night that was simply awesome...

    Nick I didn't infer that you did the wrong thing. I'm in referring to myself from last swaparama when I had him as my trade partner I should have sent him more. Please don't take it that way.
