Carawheat? Chocolate wheat? Midnight wheat?

Last year I got a 55 lb bag of Crisp #19 floor malted maris otter for $60 in a group buy with my local homebrew club. The best by date was two years after the bag was filled.

Wheat is supposed to help with head retention. Would versions of wheat like carawheat or chocolate wheat also work? How about using some wheat extract?

Why no sparge? I brew 3 gallon BIAB batches; sparging is easy and increases starting gravity.

That is all I'll probably be doing.

I bought several British hop varieties that I've never used before last year to use in a series of SMASH bitters. I bottled the batch using minstrel hops yesterday. I really like it, but come to find out that minstrel hops have been discontinued.

Ahh Muntons. I used Muntons in a lot of British styles, but alas it's no longer available.

I just got a bag of Crisp #19 floor malted maris otter. The best by date is two years away.

I'm very happy with the results. The pale chocolate was only two ozs in three gallons and was for a slight color addition.

My batch last month was a vienna using 5 lbs vienna malt, 1 pound maris otter and 2 ozs pale chocolate in three gallons. And .5 oz sterling for 30 minutes. 👍👍

Three gallons of sorta best bitter: 4 lbs maris otter, 8 ozs victory, 1 oz chocolate, 4 ozs flaked barley, azecca hops to 22 IBUs and S-189 fermented in the low 60s.

Are these any good? The only PH that I want to keep track of is for my star San solution and I'd rather not spend the money a PH meter costs.
