    Unfortunately this was my first beer and my natural inpatients got the best of me. It only made it about 3 1/2 weeks. It was good but I can see where it would have benefited from more time. Maybe once I build up a store of homebrew I will make it again and let it age longer.

    Did you use a secondary? If so how long did you leave it in there? Also it depends on the Flocculation of the yeast. Some yeast drop out of suspension quickly (high flocculation) others take a while and some beers (like a hefeweizen) are suppose to stay cloudy. Chances are it needed a little...

    Extremely interested in making mead - need help

    Mead made with just honey does have a unique, but good, taste. Closest I could come to discribing it would be kinda like a white wine... but not. Personally I really like mead made with fruit(Melomel). I haven't brewed any yet but I had some at a SCA event a few years ago and loved it.

    I did the Oktoberfest from Brewer's Best as my first beer and it is actually does come with Ale yeast, so yeah technically it isn't a "true" Oktoberfest, but its pretty tasty.

    If you have a local store that has a lot of different beers and wines chances are they might also have some mead. Chaucer's Mead is fairly common and should give you a good idea as to whether you like mead or not.

    From what I have read those water bottles are no good because they are oxygen permiable. Glass carboys or Better Bottles are preferable.

    My hydrometer broke so I couldn't get an acurate alcohol reading but its got a kick to it. I used the Belgian Amber rock candy to boost the sugar and thus the ABV. I will post the recipe this weekend.

    I really like the Belgian Ales too. White Labs has a Trappist Ale liquid yeast that works well IMO, its lends a fruity, spicey clove taste to the beer. Also steeping some Belgian Biscut malt gives it a great flavor. I brewed a Belgian Ale a few weeks ago. It is currently bottle conditioning...

    Question about bottling?

    Make sure you have the same gravity reading from your hydrometer two days in a row. That will let you know that your fermentations is done. But if you rack it to a secondary for a week it will allow the beer to clear much better.

    The original gravity is the full volume of the wort, with the water, cooled. Actually I think hydrometers are calibrated at 60 F so if the reading is taken at room temp you will need to do a temp adjustment.
