I made a double batch and used a starter just to ensure it really takes off. Ordered mine from AIH and it drop shipped from Seattle via UPS Ground. Ordered on Friday night, shipped Tuesday, on my door in MN on Friday.

I would not use Lacto for a sour mash in the Zymatic. There are just too many areas that you cannot clean well enough and you'd hate to contaminate your new shiny wort maker. I'm planning on making quite a few sours but only after I transfer new wort to the fermenter. I will also have...

Agreed! I had a friend over today and we had both of my beers, on tap! My first two batches didn't turn out well but this 3rd and 4th were excellent. My friend was blown away, which is surprising since we regularly frequent the beer halls here in MN. Felt great to have great beer on tap.

I think it's cycling too often. I'd shoot for having it run a few minutes just once an hour. When the compressor starts, it takes a bit before it starts cooling at its best. Maybe shoot for a 3F band.

I would get it fixed. Sounds like a pretty nice unit already with a lot lower cost to get it fixed than to get a new one. Where did the water come from? If it's leaking refrigerant you'll want to ventilate your house well, especially the lower areas of your house as it'll sink below air.
