    In fairness he said "beer" not "great beer". I have made some crappy batches but at the end of the day it's still beer. I think some of the more veteran brewers have found the harmonic balance between lazy and crazy when it comes to sanitization and other techniques with brewing.

    I would recommend one thing. Soak your vanilla beans in some vodka for the duration of your primary fermentation. You only need a few ounces. This will extract all the vanilla flavors. Then add it to your secondary when you rack over. I did this on an oatmeal stout and it worked out really well...

    Well, I tried oven cleaner. Pretty much ruined the pot. It left numerous discolored spots once I cleaned it. I followed the directions for SS on the can too. Not worth saving at this point. I had bar keepers friend too. Should have just used that.

    brew day from hell? need advice asap!

    Consider the multiple factors that can effect OG. With the multiple boil overs, and issues with boil time and hop additions your reading could be off by a decent amount. It also could be dead on, which means your mistakes helped you. Either way, you made beer and I am sure it will be just fine.
