    Chiming in for some clarification for myself... if OP did decide to increase the boil time, and reduce the hop dosage to compensate to achieve the same IBU, wouldn't that still change the end flavor? A 15 minute boil with all of the hops would provide what would normally be considered a late...

    If you plan on only doing 2.5 gallon batches you should be fine with the 5.5 gal mash cooler. If you do a full volume boil, again for a 2.5 gal batch, so maybe around 3.5-4 gal Pre-boil volume, a 5 gallon kettle should be fine.

    Rury, did you ever test your hydrometer in water yet, as suggested? Even if you don't have easy access to distilled water, regular tap water should still measure close to 0, ruling out a bad hydrometer.

    When you say you "watch it for a minute", do you mean you place the sample , close the glass, and then let it sit a minute before taking a reading?
