The music that shaped my life.

"In Heaven there's no beer, that's why we drink it here ..." :) Thank you, good sir. I believe I'll have another Pils. One is cooling off in the fridge now. By the way I'm a Ronald James Padavona fan. You know .. the guy who sang with ELF, Rainbow, Sabbath, and Dio.

Looking for a new beer style to brew, any recommendations?

Never heard of this particular brew. I'm clueless.

Any special considerations brewing with Pilsner malt?

A thread topic like this is good information. There are variables you have to take into account and one of them is the grain itself. Not all Pilsner grain is the same. The best stuff is low protein, well-converted malt. I rarely argue about or recommend which brand is best, but if I find a...

    Winter/holiday beer brew siggestions

Now that you mention it one of Sam Adams best is their spiced Winter Lager, as is their Old Fezziwig's. It's a mild seasonal they brew during the fall and winter. Winter Lager is one of the few they brew that tastes good with the amount of Crystal used. I'm no real fan of using crystal for...

Looking for a new beer style to brew, any recommendations?

You might be cautious about following his scribbled directions for a "field beer" done with oats and a simple cover over the fermented mash. That one is missing barley and a good yeast along with proper mashing and temp control. Oats done without proper cooking and malting or a barley malt...

    Grodziskie Sour

I'm waiting for first frost or freeze. I've refused to make beer for MONTHS because the kitchen has been shanghai'ed for sour doughbread and fruited kombucha by Number 1 Son. His flour and vinegar spray gets everywhere. He really needs his own kitchen. :( When first frost or freeze comes it's...

    Whats your highest ABV achieved?

With beer ... a brew that was about 6.5%. I made a honey wine once that got diluted down from about 14%. Holy crap, I couldn't drink it before or even after it aged for almost a year. Eventually it ended up as cooking wine.

    Why the rush?

Can I do it? Probably. Would I do it? No. Not with beer. I've effed up a few batches to learn that even if it's a hobby it's no fun pouring your efforts down the drain.

    Sulphur smell in hefeweizen

One thing you could try is adding yeast nutrient in the form of DAP (diammonium phosphate) at about a half teaspoon per 5 gallons. Add the DAP in boiled water solution to your wort immediately prior to or during early primary fermentation phase. I do all grain and prefer the WLP300 yeast when...

    thoughts of overnight mashing

You can make a ridiculously dry ale using an extended mash with the right combination of highly diastatic malts. No need for an overnighter or amyloglucosidase, either. There are different methods but I've found the 145F-150F range for 90-120mins with Pilsner/two row/Vienna works well. One of...

    Paulaner and Hacker Pschorr Oktoberfestbiers

Good for you. Fest 2020 is going to be a bit tighter for me. I scored one case of the Hacker-Pschorr O-fest Marzen for $42 plus tax. Jersey robbers, I tell ya. The one good shop I sometimes buy from had no less than five choices this year. Still eyeing a case of Ayinger .... Small...

    Paulaner and Hacker Pschorr Oktoberfestbiers

I'm glad someone can find a double shot of good German festbier locally. The shops around here wouldn't know WTF that stuff was, let alone being able to pronounce it. I haven't seen Paulaner O-fest Wiesn for almost two years now, even after asking for it. Had to settle for Weihenstephaner...

    George Washington’s Beer

Historically Washington's field expedient "small beer" or "small brew" for the troops was a pretty rough recipe. Given today's available ingredients it's nothing I'd want to drink on a regular basis. On the other hand there's a commercial porter that Philly's Yards Brewing markets that is...

Beginner Doing BIAB Wheat Beer. How does my recipe look?

I had to leave the States over 20 years ago to get a good German wheat beer. Naturally, I didn't stay and was just visiting. Back then the US didn't really have any good commercial wheat/witbiers, in my opinion. The Germans in Munich thought I was odd bringing a backpack full of Erdinger...

Invest in a blow off tube!

First time I brewed with WLP300 it was an experience. Just after pitching I use and airlock, then switch off to the orange carboy cap and blowoff tube. The guy at the brewshop asked me what yeast I planned to use, so I told him. "You're definitely going to need this," he said. Boy was he...

    Cats

Can verify the "cat claiming" that goes on. Nothing escapes my Old Gray Man. If a new box comes inside, he sits in it. If bags of groceries arrive they get inspected. When my wife got me a brand-new recliner, guess who "claimed" it. Just to drive him nuts I sprayed a blanket on the seat of...

Lime zest in vodka for Mexican Lager

Some citrus zest, especially limes, will add not only bittering, but something called furocoumarins to your beer. Just a friendly warning for anyone who has a sensitivity to sun or UV because it could aggravate a sunburn. In the summer I have a habit of adding ice and a slice of lime to beer...

Looking for a beer to brew with a large aging window.

If you don't like the German-style wheat the recipe can always be modified a bit. I've made a similar beer almost like the above but substituted California ale yeast (WLP001). That yeast is strong and vigorous but won't give the essence or flavors the German yeast would add, and given the malt...

Looking for a beer to brew with a large aging window.

If you like German style beers a weizenbock would work. It's a high gravity brew that works easily with fresh extract and "soft" bottled spring water. Anything around 6-9% ABV ages well. If interested, take a look at the link. https://learn.kegerator.com/weizenbock/

Brulosophy expert can't tell a Blonde Ale made with straight RO from RO plus minerals

This season has to be one of the worst ... for me, anyway. Can't get the kitchen to myself because almost everyone is home. Sourdough and kombucha being done by one boy and the wife is home with a busted knee for a couple months. Couldn't get into the kitchen edgewise if I wanted. Besides, all...
