Making a traditional Germnan hefeweizen with pilsner malt instead of 2-row

I don't know. That Miraculix guy drinks unboiled, non-Rheinheitsgebot stuff. I hope his ears are itching. :D

    Good beer in New Jersey?

Good God. Is that place still open? If I recall correctly there's an old abandoned GM plant nearby and I was always getting them confused. Besides, the question was about "good" beer. I haven't been that way for a few years and was always more interested in the nearby Costco. The ethnic...

Making a traditional Germnan hefeweizen with pilsner malt instead of 2-row

I did a decoction on the American-style hefeweizen with a slightly higher bittering level than a German hefe. The foam on the fresh beer wasn't fine and rocky but literally wouldn't go away. That batch disappeared quickly and I didn't save any bottles to observe whether the carbing changed.

    Random Picture Thread

Firebuggin' never gets old. I have some napalm recipes but that's off-topic and off the record.

Making a traditional Germnan hefeweizen with pilsner malt instead of 2-row

For my hefeweizen beers it's Belgian or German Pilsner malt. The brewshop offers Dingemans or Avangard so that's what I typically choose along with WLP300 yeast. The WLP351 strain left a clove essence I didn't appreciate, so it's strictly WLP300 - for me, anyway. I've done step mashes...

Are you mashing Crystal Malts and dark grains?

A mash will usually contain a base malt at saccharification temperatures for conversion and you're looking for a higher level of efficiency. With a steep you aren't so concerned with diastatic levels, conversion efficiency or an exacting range of temperatures because it's really intended for...

    1st Oktoberfest

Sam's uses a portion of crystal for sweetness in the Winter Lager seasonal and in the Octoberfest recipes. It's still good beer but different from the German versions. A German import beer available this time of year is the Paulaner O-fest Marzen. I plan to try a six of this on the side while...

Are you mashing Crystal Malts and dark grains?

I mash crystal or dark grains but there's some compelling discussion about cold steeping by Gordon Strong and also some info about steeping on the Briess brewing blog on their website. There's no argument about Gordon Strong's success at making good beer but there's always room for discussing...

    Brewing water PH ?

If you're using filtered tap water from your home you should expect a pH above 7. The water company will adjust the pH upward slightly to reduce metal leaching from your water lines. I purchase soft bottled water at the store and don't use my house tap water at all any more. From what I...

out of curiosity, fusel alcohol influencing

Precisely the reason why I drink the ultra-light lawnmower lager during the hot summer. A nicely hopped lager or Pils will work well. I typically drop a handful of ice into a mug with slice of lemon or lime and it works extremely well with much less buzz.

    Cider sulfur bomb.

I sleep with my beer. Sometimes. The master bedroom is one of the best insulated rooms in the house and keeps a fairly constant temperature. We keep it cool and it stays within a few degrees of 60F during the winter. I don't like keeping a carboy in the kitchen where it might be disturbed.

    Not so hefe weizen

People have good results with 3068, but I prefer using WLP300 for German-style beer like this. Try bumping up the fermentation temperature a few degrees if using 3068 because it seems 60F or so is a bit low. Ester, phenolic ... ester, phenolic. There's a difference. If you want the fruity...

Anyone know what type of yeast is included in the brewers best kits

Agree 100%. If you're suspicious the kit might be old check the dry yeast packet for a possible expiration date. If you don't want to use that yeast it might give you an opportunity to use a liquid strain instead. Choose something similar - or not. My first Mr. Beer kit had a dry yeast but I...

    Troeg's Mad Elf

I usually wait until the first frost hits to do some brewing. Just got two packs of WLP802 and two packs of WLP820 for the fall. That said, I have some commercial Mad Elf from last year still floating about and a $50 gift card burning a hole in my pocket waiting for the German festbiers to hit...

    Long time no see

If you don't know about the conversations regarding drywall substitutes for gypsum in the mash or fashioning a home-made barrel from pressure-treated porch wood ... well, you should, and then forget about it immediately. o_O

    6hr flight, VA to CA

I hate heights. Thirty-some years ago I took a road trip with a couple buddies. We got in line for a double-loop roller coaster. The first half of the ride was terrifying. It was a rough few minutes. The first thing I did when I got off was get right back in line for a second ride, then got...

    6hr flight, VA to CA

I've traveled by air a lot over the years and my main peeve has been security or delays. At one point we were traveling to Las Vegas on a red-eye flight (late) and we took a delay. I was annoyed and crabby knowing we wouldn't arrive until late. The wife noticed my frustration and a few seconds...

Worst fast food ideas resulting in horrible food

Will NEVER touch one of those unless the choice was death by starvation. I'm convinced this is a two-fold marketing attempt to warp customer perceptions about meat while trying to boost profit margins. Look at the P&G fiasco - a US $8 billion loss to their bottom line with the "woke" shaving...

Worst fast food ideas resulting in horrible food

What about Bloomin' Onions? IMO, a fizzy beer made the horseradish and deep-fried onion more tolerable. Those were good eating during Happy Hour, but a couple hours later Jesse Owens would've come in a distant second in a race to the loo. *~
