    Round 2: Holiday Ale

Just finished my second brew... Holiday Ale came out perfect! Final gravity was at 7.8% ABV. Little strong on the orange side, but I think it will mellow out after a week or two of additional conditioning...

    Trub or not to Trub?

So, I made a batch of Amber...first time brewing. I accidentally left the trub in the fermenter with all the beer. Well not accidentally I guess, but I missed that part in the instructions. I basically think I got a good beer considering that only after a week of conditioning I tried another...

    Holiday Ale in the works!

I didn’t do that, but will from now on... it stayed steady at 212F when the water was boiling...I live in Virginia on the eastern shore at sea level, so 212F equals boiling here. Thanks for the tip, I’ll make sure I do that before hand!

    Holiday Ale in the works!

And of course I say that while having a digital thermometer on top of my primary...lol... maybe I’m just full of ****.

It works like a charm! I have a thing for analog...

    Holiday Ale in the works!

It’s pretty dead on and the needle drops back to room temperature in a matter of seconds once removed...

    Holiday Ale in the works!

I’m just a beginner... I used the Brewers Best recipe for Holiday Ale. I just followed the instructions, I added hops after I was done steeping, wort returned to a boil and broke... I boiled for 40 minutes then added more hops for the final 15. I did an Amber (first time ever Brewing) and left...

Just finished my first batch!!!...and I think I nailed it!

I’m just backing the point of not needing a wort chiller... although I do find them intriguing. I’m new to all of this, so don’t crucify me...lol

Just finished my first batch!!!...and I think I nailed it!

I chilled the Amber slowly and it was fine... took about 30-40 minutes in the tub...

Yeah, but I think me not pouring down the side added to the pronounced head... I tend to think that how airtight your primary fermenter is...adds to some carbonation. Just a guess, but it kind of makes sense.

Just finished my first batch!!!...and I think I nailed it!

Also like to add that I can usually drink about 4 or 5 domesticated non light beers and feel the same way...(don’t judge)

Just finished my first batch!!!...and I think I nailed it!

Yep, it was the block party. I feel it’s a great starter that’s pretty forgiving to rookie mistakes. I was pretty nosey in the beginning, always lifting the lid, even moved the primary around quite a bit to find the most stable temp in the house..I also didn’t notice any krausen layer on the...

Just finished my first batch!!!...and I think I nailed it!

No doubt! I’m going to try my best to be as patient as possible. From reading, I’ve learned the higher the gravity, the longer the wait in fermentation and bottling. I love stouts, I can’t wait to finally make my own, I just know the wait will be excruciating!!!

    Greetings from Chesapeake, Virginia!!!

Thanks! I let it sit in primary for a month...this was after a day of conditioning... it gets flat quick, so it’s kind of like fool’s gold.

Just finished my first batch!!!...and I think I nailed it!

Thanks! I went ahead and got a holiday ale started last night... I think I got the fever. I would like to learn how to get away from the extract and go full grain...starting from scratch.

Just finished my first batch!!!...and I think I nailed it!

So.. I decided to take on home brewing. I purchased a kit from Northern Brewer with the Amber Ale. I let it ferment in primary for a month, and just bottled it las Sunday (Veterans Day). I was worried because I thought I may have let it ferment too long...I’m in the Navy and had to go out for 2...

    Greetings from Chesapeake, Virginia!!!

Just bottled my first batch of Red Amber this Sunday... it smelled awesome, so the next day I tried a glass. I was really surprised how good it tasted, plus it seemed to have a decent head for not being conditioned...
