    How old is the regulator? Mine(old enough to vote in most states) was doing the same so i changed the manifold gasket and it fixed it. Not saying that's entirely what's going on with you but something to look at.

    Most saisons are boring imo unless spices or fruits are added. Acid malt? Ive done a Rhubarb saison that was killer, the 'barb added a nice tartness that blended well with the style. Now i save all my rhubarb for beer, not wine.

    Marketplace or Craigslist is wonderful for bigger tanks on the cheap a lot of times you can get them for even less if you buy a lot of equipment and sell off what you don't need / want and just keep the tank. Also good to keep in mind is expiration date of inspection on the tanks I believe...

    There is such a thing as renting tanks, local beverage grade supplier rents 20# tanks for $2 a month. They also sell them for a lot more. I think it just depends on your area and your supplier. Although i do agree to find a tank to buy if possible and fill from there, bigger the better...

    Is there any need to use liquid nails or equivalent between the two coolers under the ring that is siliconed in? Not sure if this is over thinking, just want to to be sturdy and top cooler not to swivel. As with any project, is there anything you would change or do differently?

    I have seen those pancho coolers, if looks mattered more than money i would get one. Wouldn't there be a lot of headspace over they keg with one of those though?
