    I just wanted to make a comment that when I look at this forum at work sometimes people happen to see Cheeseheads avatar and they always ask me "what and the f***k are looking at". When I tell them that its a homebrew forum they are like ya right! Sorry Cheese, no offense I hope ;)

    Thats wierd when I did my batch I nearly filled my 5 gallon carboy to the rim and did not come close to having a blow out. I followed Ed's recipe exactly.

    Starters?

    One thing I have noticed in my short career as a home brewer is I get a way faster and vigorous fermentation with dry yeast or also a starter than compared to a smack pack.

    Did you mash,sparge and collect all the wort and let that sit out overnight or did you let the mash sit overnight?

    "Resting" Water Before Mash and Sparge

    I know that if you let the water sit out that chlorine will dissapate but chloramine will not. You need to find out what your water company uses. I suggest buying a charcoal filter and an rv hose and then you don't have to worry about any of that.

    No you attach it to the racking cane itself so that the beer gets filtered before it enters the end of the racking cane

    Yes, a secondary will really help to clearyour beer. If you want a cheap alternative when you rack to your bottling bucket ziptie a sanitized 1 gallon mesh paint strainer onto the end of your racking cane and that will filter most if not all the floaties.

    If you put leftover wet caps in with the ones that were dry then that is why they rusted. Next time set all the wet caps on a paper towel to airdry overnight or just toss em since they are so cheap. This happened to me a few brews ago. Not sure I even know what oxygen barrier caps are.
