    Aeration is key pre yeast pitch, what water are you using?? I was under the impression that oxidized beer happens post yeast pitch. How fresh is the extract?? Old extract makes beer dull flavored. For that matter old grain has the same effect. Don't think it was the air, as it's a common...

    Cool, I have a house Kolsch that I'm thinking of subbing the wheat out. Probably wont be as light (traditional Kolsch) but might be fun. Anyone know a good representation of rye beer to get the flavor????

    I had planed to bottle my show mead on Nov 1.......... Life and a kickin Halloween party intervened on 10-31........ So I still have corks in Camden water soaking, can I still use them 11-2????

    Watch out on the cinnamon, and cloves. They can wreck shop if used in large quantity. I like the spice bag idea, sortof a lil of this and that brew.

    Sounds like a green beer to me, your abv is probably high and these beers mature slower. I made an imperial chocolate stout that hit its stride arnd 6 mnths. Relax let the yeast work :) throw another batch in the works...........Pipeline!!!!!

    Ya I saw that they where using peanut butter powder..... Where does one find peanut butter powder. Also ppl where "de-oiling" peanut powder but how does one "de-oil"?

    Christmas Beer!!

    Mmmmm Vanilla jet fuel :) Thinking about stayin with the house Kolsch and do a lil orange zest and maybe a touch of coriander. The Kolsch stands on it's own but this would punch it up a bit. I want to do the vanilla porter but probably for more of a pipeline beer.
